Slow Cooker Creole Pork with Red Beans

Anytime I can find a slow cooker recipe that my family likes, I keep it handy for those days when I need a little help with a homemade dinner. This recipe has only six ingredients that I always have in my refrigerator and pantry. I used canned small red beans but regular sized red beans can be used. I like to serve the Slow Cooker Creole Pork with Red Beans over long grain rice or more as a soup dish but always with my Southern-Style Buttermilk Cornbread. It’s easy, comforting, and such a timesaver!!!

INGREDIENTS TO MAKE SLOW COOKER CREOLE PORK WITH RED BEANS

  • Boneless pork country-style ribs
  • Creole seasoning
  • Chicken stock or broth
  • Canned small red beans
  • Trinity mix (fresh diced onions, bell peppers, celery), frozen or fresh chopped
  • Fresh jalapeño pepper

WHAT IS A TRINITY MIX?

A trinity mix is a Cajun and Louisiana Creole version of the French mirepoix; a seasoning base for meat dishes, soups, stews, and sauces. The traditional French mirepoix is onions, carrots, and celery (ratio 2:1:1) compared to the trinity mix containing onions, bell pepper, and celery (ratio 2:1:1). The term itself “trinity mix” comes from a famous New Orleans Chef Paul Prudhomme because these three ingredients were the base used in many of his Cajun and Creole recipes in which he specialized in.

WHAT IS CREOLE SEASONING?

Creole seasoning is a blend of spices and dried herbs used in Creole cooking. It’s more convenient and faster to use a blend instead of having to measure out each one individually. Creole seasoning actually originated in the region of New Orleans, Louisiana and is a fusion of all of the different cultures that settled there but with a predominant French influence.

The ingredients in Creole seasoning blends vary depending on the dish that’s being made or by the area of origin. Because there are so many different brands of Creole seasoning blends there isn’t really a standard list of spices and dried herbs. Paprika, garlic powder, dried thyme, ground oregano, white or black pepper are some common ingredients in the blend. Some might also contain chili powder, dried basil, celery salt, salt, or red pepper. Usually it’s not sold super spicy but with just a subtle heat. There are some mild, medium, and hot Creole seasoning blends that can be found on the market to help control the spicy heat level of the dish thats being made.

HOW TO MAKE SLOW COOKER CREOLE PORK WITH RED BEANS

  • Cut the ribs into bite-size pieces and coat with the creole seasoning; set aside.
  • Add the chicken stock, red beans, trinity mix, and finely chopped jalapeño to the slow cooker; stir together.
  • Stir the pork rib pieces into the bean mixture and cover with the lid.
  • Cook on HIGH for 2-3 hours or LOW for 4-6 hours.
  • Skim off any pork fat that is floating on the top.
  • Serve pork over long-grain rice, such as Jasmine rice, and/or cornbread.

  • 8 oz trinity mix (fresh diced onions, bell peppers, celery), frozen or fresh chopped
  • ½ fresh jalapeño pepper, finely chopped

Instructions
