Key Lime Yogurt with Graham Cracker Granola

Ingredients

  • 1 (4 ½ ounce) sleeve graham crackers, crushed
  • 1 cup old-fashioned oats
  • ½ cup unsweetened shredded coconut
  • 3 Tbsp butter, melted or coconut oil
  • 2 Tbsp honey
  • ½ tsp salt
  • 2 cups plain yogurt
  • ¼ cup fresh key lime juice
  • 2 cups mixed fresh berries

Instructions

  • Preheat oven to 350°F. Line a sheet pan with a silicone mat or parchment paper. To crush graham crackers, pulse in a food processor or in a large Ziploc bag with a rolling pin.
  • In a large bowl, stir together crushed graham crackers, oats, coconut, butter, honey and salt. Transfer mixture to prepared sheet pan. Bake for about 20 minutes, stirring often until golden brown. Set aside to cool; will crisp as it cools.
  • In a medium bowl, whisk together the yogurt and lime juice. Divide the yogurt among 4-6 serving bowls. Top with granola and fresh berries.

Notes

  • Leftover granola can be stored in an airtight container at room temperature for 1 week.
  • The granola is great over ice cream or pie.
