Curry Tuna Salad

A mouthwatering Curry Tuna Salad made with a curry mayonnaise, crisp apples, and chewy raisins. Mix it all together in just 10 minutes for a light lunch or a quick snack. Everyone will love this!

Ingredients

  • 4 (7 oz) canned tuna in water, drained
  • ½ cup mayonnaise
  • 1 Tbsp curry powder
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp ground white pepper or black ground pepper
  • 1 large Gala, Honeycrisp, or Green apple, cut into ½ inch cubes
  • ½ cup raisins or currants
  • ½ cup green onions, chopped
  • ½ cup fresh cilantro, chopped

Instructions

  • In a small bowl, make the curry mayonnaise. Mix together the mayonnaise curry powder, cumin, salt, and white pepper; set aside. In a large bowl, add the drained tuna, apples, raisins, green onions, and fresh cilantro. Add the curry mayonnaise and gently stir together. (Add a little more mayonnaise if needed).
  • Serve immediately or refrigerate for up to 3 days in an air tight container.

Notes

  • Serve on croissants, baguette, ciabatta, or sandwich bread. Any sandwich toppings such as romaine lettuce and or alfalfa sprouts are delicious. 
  • Serve with crackers for a light lunch or a snack. 
  • Serve it as an appetizer with crackers or fill it in some puff pastry cups.
