It’s really simple to make! For a short cut use a store bought dressing or make the Thousand Island Dressing in the recipe.
This Reuben In A Bowl (Keto) has the ingredients of a Reuben sandwich without the rye bread. The thick slices of tender corned beef brisket will make your mouth water. The sauerkraut, Swiss cheese, and Thousand Island (or Russian) Dressing give it the sour tang taste. The addition of the shredded cabbage and carrot are the base of the bowl. But the toasted caraway seeds and cornichons are the secret ingredients that make all the difference!!! It really tastes like a traditional Reuben Sandwich.
Traditionally a Reuben Sandwich is served with a slather of Russian Dressing on each piece of bread but for this bowl I chose, it’s less spicy counterpart, Thousand Island Dressing. Russian Dressing is a deeper orange tinge because of the paprika and it’s usually spicy. Thousand Island Dressing is a lighter color and has citrus. Either dressing would be delicious drizzle on this recipe for Reuben In A Bowl (Keto).
INGREDIENTS TO MAKE REUBEN IN A BOWL (KETO)
- Caraway seeds
- Yellow onion
- Green cabbage
- Shredded carrot
- Corned Beef Brisket
- Sauerkraut, sugar-free for Keto
- Swiss cheese
- Cornichons, sugar-free for Keto
- Green onion, chopped for garnish
INGREDIENTS TO MAKE THOUSAND ISLAND DRESSING
- Mayonnaise
- Ketchup, sugar-free for Keto
- Sweet pickle relish, sugar-free for Keto
- Creamy prepared horseradish
- Fresh lemon juice
- Worcestershire
- Kosher salt
- Freshly ground black pepper
- Hard-boiled egg, optional
HOW TO MAKE THE THOUSAND ISLAND DRESSING (For Keto use sugar-free)
- Whisk mayo, ketchup, relish, horseradish, lemon juice, and Worcestershire; taste for seasoning and set aside.
- Optional: Add a chopped hard boiled egg to the dressing.
HOW TO MAKE REUBEN IN A BOWL
- Make the dressing by whisking all the ingredients together, taste for seasoning; set aside.
- In a large skillet over medium-high heat, toast the caraway seeds, until fragrant about 1 minute.
- Remove from pan.
- Heat oil over medium-high heat, add onion; sauté for about 3 minutes until lightly golden.
- Add the cabbage, carrot, and season with salt and pepper.
- Sauté for about 5 minutes until cabbage is crisp and tender.
- Stir in corned beef brisket and sauerkraut; toss and until heated through.
- Top cabbage mixture with Swiss cheese cheese, cover with a lid or put under a broiler until cheese is melted, about 3 minutes.
- Remove from heat.
- Garnish with toasted caraway seeds and sliced cornichons.
- Drizzle with the Thousand Island dressing and sprinkle with green onions.

Ingredients
- 2 tsp caraway seeds
- ½ yellow onion, chopped
- 1/4 green cabbage (about 5 cups), thinly sliced
- 1 cup shredded carrot
- 1 lb Corned Beef Brisket, cooked and cut into ½-inch slices
- 1½ cup sauerkraut, drained, sugar-free for Keto
- 1 cup Swiss cheese
- 1/4 cup cornichons, sugar-free for Keto, for garnish
- 2 green onion, chopped for garnish
Thousand Island Dressing
- ½ cup mayonnaise
- 2 Tbsp ketchup, sugar-free for Keto
- ¼ cup sweet pickle relish, sugar-free for Keto
- 1 Tbsp creamy prepared horseradish
- 2 tsp fresh lemon juice
- 1 tsp Worcestershire
- Kosher salt and freshly ground black pepper
- 1 large hard-boiled egg, chopped (optional)
Instructions
