WHAT IS AIOLI?
It’s a Mediterranean emulsified sauce traditionally made of olive oil, garlic, lemon, and an egg yolk, commonly found in Spain, Italy, and France. It looks similar to mayonnaise but the difference being that aioli is made from garlic and olive oil, whereas mayo is made from egg yolks and canola oil.
HOW TO USE AIOLI
- Use as a dip for raw and cooked vegetables, shrimp, or chicken.
- Use as a sauce over cooked vegetables, cooked seafood, chicken, or meats.
- Great as a sauce with any grilled meats or grilled seafood.
- Spread it on a sandwich as you would mayonnaise.
- Use it in place of mayonnaise when making tuna salad, chicken salad, or egg salad.
The mayonnaise in this recipe replaces the egg yolk and olive oil, as a quick alternative. Traditionally aioli is made with lemon juice but this recipe uses cider vinegar for the acidic component. And although there is a jalapeno it isn’t very spicy.
Verde Aioli
Ingredients
- ¾ cup olive oil mayonnaise
- ½ cup packed fresh flat leaf parsley
- ½ cup packed fresh cilantro leaves
- 1 jalapeno pepper, seeded and diced
- 2 garlic cloves, halved
- 1½ Tbsp cider vinegar
- ¾ tsp cumin
- ¼ tsp salt or to taste
Instructions
- Combine all ingredients in a food processor or blender; blend until smooth and chill. Cover and let sit in the refrigerator for at least 1 hour to let the flavors blend.
