French Green Beans with Shallots

- 2 Tbsp olive oil
- Pinch of sugar and kosher salt
- 2 large shallots, thinly sliced
- ½ cup water
- 12 oz French green beans or Haricot Verts, trimmed
- 1 tsp kosher salt
- ¼ tsp freshly ground black pepper
In a large skillet with a lid, heat the oil over medium-low heat. Add shallots, pinch of sugar, and a pinch of Kosher salt; cook stirring frequently until translucent, about 8 minutes. Add the green beans, water, salt and pepper; bring to a boil. Cover the skillet, reduce heat to low and cook for 8 minutes.
Remove lid and turn heat to medium-high; cook stirring frequently until liquid has evaporated, the green beans are tender and the shallots are jammy, about 6 minutes. Taste for salt and pepper. Serve warm.
