Apple Cider Glazed Pork Chops

Ingredients

  • 4 center-cut pork chops, bone-in or boneless
  • 2 Tbsps canola oil
  • 1 ½ cups apple cider
  • 2 Tbsps light brown sugar
  • 1 Tbsp whole grain-mustard
  • salt
  • ground black pepper

Instructions

  • Pat the 4 center-cut pork chops dry with a paper towel. Season both sides of each pork chop with salt and ground black pepper. In a large skillet, heat the canola oil over medium-high heat until it shimmers. Add the pork chops and cook about 4 minutes on each side, or until golden brown. Remove from the skillet and loosely cover with foil.
  • In the same large skillet, add the apple cider and light brown sugar. Cook until it forms into a thick, syrupy glaze. It will reduce about halfway. Remove skillet from heat. Stir in the whole grain mustard and taste for salt and pepper.
  • Return the pork chops to the skillet and coat in the apple cider glaze. Spoon more glaze over the pork chops when serving.
