Apple Cider Glazed Pork Chops

- 4 center-cut pork chops, bone-in or boneless
- 2 Tbsps canola oil
- 1 ½ cups apple cider
- 2 Tbsps light brown sugar
- 1 Tbsp whole grain-mustard
- salt
- ground black pepper
Pat the 4 center-cut pork chops dry with a paper towel. Season both sides of each pork chop with salt and ground black pepper. In a large skillet, heat the canola oil over medium-high heat until it shimmers. Add the pork chops and cook about 4 minutes on each side, or until golden brown. Remove from the skillet and loosely cover with foil.
In the same large skillet, add the apple cider and light brown sugar. Cook until it forms into a thick, syrupy glaze. It will reduce about halfway. Remove skillet from heat. Stir in the whole grain mustard and taste for salt and pepper.
Return the pork chops to the skillet and coat in the apple cider glaze. Spoon more glaze over the pork chops when serving.
