Ingredients

For the Dipping Sauce:

  • ¼ cup rice vinegar
  • ¼ cup fresh lime juice
  • 2 Tbsp sugar
  • 1 Tbsp fresh ginger, minced
  • 2-4 tsp chili garlic sauce, (4 tsp for very spicy)

For the condiments:

  • ½ cup fresh cilantro leaves
  • ½ cup dry roasted peanuts, coarsely chopped
  • ½ cup carrot, julienned
  • ½ cup cucumber, seeded and julienned
  • ¼ cup fresh mint leaves, coarsely torn
  • 1 lime, cut into small wedges
  • 16 Boston or Bibb lettuce leaves, washed and dried

For the beef filling:

  • cup dry sherry or beef stock
  • 1 shallot, thinly sliced
  • 2 Tbsp sugar
  • 1 Tbsp chili garlic sauce
  • 1 Tbsp olive oil
  • 1 lb. Top sirloin or flank steak, trimmed, diced
  • 1 tsp salt
  • ½ tsp Chinese five-spice blend
  • ½ tsp sesame oil
  • ½ cup water chestnuts, drained and chopped
  • cup green onions, sliced

Instructions

  • For the Dipping Sauce: Simmer vinegar, lime juice, sugar, ginger, and garlic sauce in a small saucepan for about 5 minutes or until thickened. Remove from the heat and set aside until serving.
  • For the condiments: Prepare the condiments and arrange separately on a serving plate.
  • For the beef filling: In a small bowl, combine sherry or stock, shallots, sugar, and garlic sauce; set aside. In a large bowl, toss together beef, seasonings, and sesame oil. Heat a large skillet over medium-high heat, add the olive oil and sauté the beef, stirring occasionally for about 3 minutes, until the beef is seared. Add the sherry mixture and simmer until thickened, about 5 minutes. Remove from heat; stir in chestnuts and green onions.
  • Assemble the wraps: Put two lettuce leaves together for each wrap. Place about ¼ cup filling and let each person add their desired condiments. Serve with the chili dipping sauce to drizzle over the wrap filling.
