Hot Wings Lettuce Wraps

Hot Wings-style Lettuce Wraps that are a little less spicier than regular hot wings with the addition of honey and lime to the sauce. These wraps are a little spicy with a crunch from the fresh celery, cucumber, and carrots. The blue cheese sauce is the perfect dressing to compliment the Hot Wings Lettuce Wraps!

Ingredients

Blue Cheese Sauce

  • ¼ cup mayonnaise
  • 2 Tbsp milk
  • 1 tsp Worcestershire sauce
  • cup blue cheese, crumbled
  • Juice of ½ a lemon
  • 1 Tbsp fresh parsley, chopped
  • Salt and freshly ground black pepper
  • Cayenne, to taste (optional)

Condiments

  • ½ cucumber, halved lengthwise, seeded, thinly sliced crosswise
  • ½ cup celery, thinly sliced
  • ½ cup carrot, julienned
  • 8-16 Boston or Bibb lettuce leaves, washed and dried

Chicken Filling

  • ¼ cup hot wings sauce, such as Frank's RedHot Sauce
  • ¼ cup honey
  • ¼ cup fresh lime juice
  • 1 tbsp olive oil
  • 1 lb. boneless, skinless chicken breast or thighs, cubed
  • ½ tsp Cajun seasoning blend
  • ½ tsp salt

Instructions

  • Blue Cheese Sauce: In a small bowl, stir together mayonnaise, milk, Worcestershire, lemon juice, salt, and cayenne (optional). Fold in the blue cheese and parsley; cover with plastic wrap and chill until serving.
  • Condiments: Prepare the vegetables and the lettuce; chill until serving.
  • Chicken Filling: In a small bowl, combine hot wings sauce, honey, and lime juice; set aside. In a medium-size bowl, toss together the cubed chicken, Cajun seasoning, and salt. Heat a large skillet over medium-high heat. Add oil and saute the chicken, stirring occasionally, about 4 minutes. Stir in the hot sauce-honey mixture. Simmer until the sauce reduces and thickens, about 5 minutes.
  • Assemble: In each 1-2 leaves, place ¼ cup chicken and little hot wing-honey sauce. Arrange the condiments and blue cheese sauce on a separate plate for everyone to add what they desire.
