  • Kosher salt
  • black ground pepper
  • 2 Tbsp brown sugar bourbon seasoning blend (or your favorite seasoning blend) *See NOTES
  • 2 Tbsp Dijon Mustard
  • 1 large yellow, white, or red onion, ¼-inch slices
  • 1 Tbsp fresh thyme leaves
  • 1 Tbsp fresh rosemary, minced

Instructions

  • Preheat the oven to 350°F. On the bottom of a shallow 13 x 9-inch baking dish, spread the onions and sprinkle with the fresh thyme and rosemary. Salt and pepper the ribs on all sides. Rub with with the seasoning blend and Dijon mustard.
  • Place ribs on top of onions and cover with foil. Bake for 1 hour (unless 2-inches wide, bake for 1 hour 30 minutes). Uncover then continue to bake for 30 minutes until fork tender. The liquid will reduce a little and the pork will brown.
  • Serve with the onions and sauce from the ribs.

Notes

  • Recommended Seasoning Blends- Cajun blend, Creole blend, Italian Herb blend, Smokehouse blend, Roasted Garlic & Herb blend, Garden Vegetable blend, Mesquite blend, or Montreal blend.
  • Omit the Seasoning Blend- This recipe is delicious without a seasoning blend. Just make sure to salt and pepper each rib.
