Watermelon Blueberry Feta Salad
Watermelon Blueberry Feta Salad is the perfect summer salad! It's a delicious combination of juicy cubes of watermelon, plump blueberries, salty feta, and fresh mint drizzled with a Honey-Lime Dressing.

- 8 cups watermelon, cut into 1-inch cubes
- 2 cups fresh blueberries, picked through and rinsed
- 7 oz. (1 ½ cups) Feta cheese, cut into ¼-inch cubes
- ¼ cup fresh mint, chopped
Honey-Lime Dressing:
- 2 Tbsps extra-virgin olive oil
- 4 Tbsps lime juice
- 1 Tbsp lime zest
- 2 tsps honey
Prepare the dressing. In a small bowl, whisk together the olive oil, lime zest, lime juice, and honey; set aside until serving.
In a large serving bowl, combine cubed watermelon, blueberries, Feta, and mint (set 1 Tbsp aside for garnish).
DO NOT add the Honey-Lime Dressing until serving. When ready to serve, drizzle the Honey-Lime Dressing and gently toss. Sprinkle with remaining Feta and mint for garnish. Serve immediately.
To serve with optional Arugula:
Prepare the Honey-Lime Dressing as directed above. Spread Arugula out on a platter. Set aside a 1 Tbsp mint and ¼ cup Feta for garnish. In a large bowl, add the watermelon, blueberries, feta, and mint.
Sprinkle the fruit mixture over the top of the Arugula and drizzle with the Honey-Lime Dressing. Garnish with the remaining Feta and Mint. Serve immediately.
- IMPORTANT: This fruit salad will give off liquid because watermelon is 92% water. It is best made right before serving and will not keep well in the refrigerator.
- TO MAKE AHEAD: Prepare all the ingredients and the dressing keeping each in a separate container. Assemble salad when ready to serve.
- FOR SMALL SERVINGS: Keep ingredients separate in the refrigerator and assemble before serving.
