Hot Wings Lettuce Wraps are a fun twist on the popular Hot Wings appetizer. It has all the elements of the traditional Buffalo Wings but turns them into a lunch or dinner dish. The hot sauce, blue cheese dip, and celery are all in the wrap. The addition of the carrots and cucumber add a nice crunch and flavor in this dish.
Use chicken breast or thigh meat but make sure not to overcook the breast meat. It will cook faster than thigh meat and dry out when overcooked. Feel free to substitute the Blue Cheese Sauce with a store bought Blue Cheese dressing to save time.
The Frank’s RedHot Wings Sauce is great because it is a hot sauce that isn’t too spicy like Tabasco. But feel free to use it if you like really spicy wings. The addition of the honey and fresh lime juice to the hot sauce, tone down the spice level and the blue cheese sauce will also extinguish the heat.
INGREDIENTS FOR HOT WINGS LETTUCE WRAPS
- Blue Cheese Sauce:
- Mayonnaise
- Milk
- Worcestershire sauce
- Blue cheese, crumbled
- Juice of ½ a lemon
- Fresh parsley
- Salt and freshly ground black pepper
- Cayenne, (optional)
- Condiments:
- Cucumber
- Celery
- Carrot
- Boston or Bibb lettuce leaves
- Chicken Filling:
- Hot wings sauce, such as Frank’s RedHot Sauce
- Honey
- Fresh lime juice
- Olive oil
- Boneless, skinless chicken breast or thighs
- Cajun seasoning blend
- Salt
HOW TO MAKE HOT WINGS LETTUCE WRAPS
- Blue Cheese Sauce:
- In a small bowl, stir together mayonnaise, milk, Worcestershire, lemon juice, salt, and cayenne (optional).
- Fold in the blue cheese and parsley; cover with plastic wrap and chill until serving.
- Condiments:
- Prepare the vegetables and the lettuce; chill until serving.
- Chicken Filling:
- In a small bowl, combine hot wings sauce, honey, and lime juice; set aside.
- In a medium-size bowl, toss together the cubed chicken, Cajun seasoning, and salt.
- Heat a large skillet over medium-high heat.
- Add oil and saute the chicken, stirring occasionally, about 4 minutes.
- Stir in the hot sauce-honey mixture.
- Simmer until the sauce reduces and thickens, about 5 minutes.
- Assemble:
- In each 1-2 leaves, place ¼ cup chicken and little hot wing-honey sauce.
- Arrange the condiments and blue cheese sauce on a separate plate for everyone to add what they desire.
