Crispy Sweet Potato Fries

Healthy, crispy sweet potato fries are a great snack or side to any meal. Customize them with your favorite seasoning and sauce.

  • Sweet potatoes
  • Cornstarch
  • Olive oil
  • Kosher or Sea salt

HOW TO MAKE CRISPY SWEET POTATO FRIES

  • Preheat oven to 425 degrees F and put rack 6-inches away from the top.
  • Prepare two baking sheet pans with parchment.
  • Peel and cut sweet potatoes into 1/4-inch thick skinny fry shapes.
  • Put in a bowl and toss with cornstarch.
  • Divide sweet potatoes among two sheet pans.
  • Drizzle and rub with olive oil; sprinkle with salt only. Additional seasoning after baking.
  • Bake 20 minutes, turn fries over, and bake another 10-18 minutes.
  • Season with salt and any additional seasoning.

SERVING IDEAS

  • Season with salt and pepper, cayenne and garlic powder, or old bay seasoning.
  • Dip into marshmallow sauce, bbq and mayo, honey mustard, sweet and sour, or sriracha ketchup.

Ingredients

  • 2 lb sweet potatoes (about 2 medium-large)
  • 1 Tbsp cornstarch
  • 2 Tbsp olive oil
  • kosher or sea salt

Instructions

  • Preheat oven to 425 degrees F with the top rack 6-inches away from the heat source and the lower rack right below it. Line 2 large baking sheets with parchment paper. Peel and cut the sweet potatoes into skinny fry shapes, about ¼-inch thick, cutting as evenly as possible. 
  • Put the cut fries in a large bowl; sprinkle with cornstarch and a little salt. Divide the fries among the two baking sheets. Drizzle with olive oil and toss to coat the fries so that the cornstarch is covered. Spread them out evenly; careful not to overcrowd.
  • Bake for 20 minutes, take out of the oven and flip the fries. Return to the oven alternating the positions of the baking sheets. Bake until the fries are crispy, about 10-18 minutes. The lower pan will bake faster than the top; take out of the oven sooner.

Notes

-Baked fries will last in the refrigerator for up to 3 days. Reheat in an oven for about 10 minutes, until warm and crisp.
-If making ahead: Cut fries and cover with water in a bowl; place in refrigerator until ready to bake, up to 1 day in advance. Dry thoroughly before baking.
