- 1½ lbs Yukon gold potatoes, about 4 medium
- 4 Tbsp unsalted butter
- 4 oz goat cheese
- ⅓ cup milk
- 2 Tbsp fresh chives, chopped
- kosher salt and freshly ground black pepper
Peel and cut the potatoes in half lengthwise, then in 1-inch crosswise slices. Cover the potatoes with water by 1-inch and bring to a boil. Lower the heat and simmer for 15 minutes, until tender.
Drain potatoes, return to pot by putting the potatoes through a ricer or use a potato masher. Add goat cheese and butter; whisk with the potatoes. Add the milk, chives, salt and pepper, to taste.
- For mashed potatoes to be extra light and fluffy, use a ricer.
- Substitutions for chives: parsley, thyme, rosemary, sage, or thyme.
