Ingredients

  • lbs Yukon gold potatoes, about 4 medium
  • 4 Tbsp unsalted butter
  • 4 oz goat cheese
  • cup milk
  • 2 Tbsp fresh chives, chopped
  • kosher salt and freshly ground black pepper

Instructions

  • Peel and cut the potatoes in half lengthwise, then in 1-inch crosswise slices. Cover the potatoes with water by 1-inch and bring to a boil. Lower the heat and simmer for 15 minutes, until tender.
  • Drain potatoes, return to pot by putting the potatoes through a ricer or use a potato masher. Add goat cheese and butter; whisk with the potatoes. Add the milk, chives, salt and pepper, to taste.

Notes

  • For mashed potatoes to be extra light and fluffy, use a ricer.
  • Substitutions for chives: parsley, thyme, rosemary, sage, or thyme.
