Goat Cheese Chive Mashed Potatoes

Perfectly whipped potatoes with chives and the delicious tangy flavor distinctly from goat cheese. A delicious, lighter tasting mashed potato side dish.

Soft goat cheese is made from pasteurized goat’s milk and has a tangy, earthy taste. It’s texture is very smooth, velvety. The best way I could describe it is that it’s similar to feta. If you’re a fan of that flavor, then soft goat cheese is in your wheelhouse. Other cheeses such as Gouda, Brie, and some Cheddar is sometimes made with goat’s milk.

Goat cheese comes in many varieties from all over the world. In this recipe it uses soft plain goat cheese, but if you want something different, you can choose a flavored goat cheese like garlic-herb or a sun-dried tomato. Also the chives can be left out or substituted with another herb like parsley, rosemary, or sage.

INGREDIENTS

  • Yukon gold potatoes
  • Unsalted butter
  • Creamy goat cheese
  • Milk
  • Chives
  • Kosher salt
  • Freshly ground black pepper

HOW TO MAKE GOAT CHEESE CHIVE MASHED POTATOES

  • Peel and cut the potatoes in half lengthwise, then in 1-inch crosswise slices.
  • Cover the potatoes with water by 1-inch and bring to a boil.
  • Lower the heat and simmer for 15 minutes, until tender.
  • Drain potatoes, return to pot by putting the potatoes through a ricer or use a potato masher.
  • Add goat cheese and butter; whisk together with the potatoes.
  • Add the milk, chives, salt and pepper, to taste.

TWO WAYS TO MASH POTATOES

FIRST METHOD- ROUGH MASHED POTATOES

  • Drain potatoes and return to pot. Add butter, goat cheese, butter, salt and pepper; mash with a potato masher. Finish with a whisk and add more milk, if needed to thin to the right consistency. Taste for salt and pepper.

SECOND METHOD- EXTRA LIGHT AND FLUFFY

  • Drain potatoes and over the pot on the stove, put the potatoes through a ricer. Add the butter and soft goat’s cheese. Whisk until melted and incorporated. Add the milk, salt and pepper, to taste. Add more milk, if needed.

Ingredients

  • lbs Yukon gold potatoes, about 4 medium
  • 4 Tbsp unsalted butter
  • 4 oz goat cheese
  • cup milk
  • 2 Tbsp fresh chives, chopped
  • kosher salt and freshly ground black pepper

Notes

  • For mashed potatoes to be extra light and fluffy, use a ricer. 
  • Substitutions for chives: parsley, thyme, rosemary, sage, or thyme.
